Stir-fry Mee Siam for my three men at home as mummy is having ladies nite out.
300g dried bee hoon (serves 2 person)
200g fresh prawns
100g koo chye, cut into 4cm lengths
1 piece fried tau kwa (dried beancurd) cut into small cubes
80g bean sprouts
2 eggs fried and sliced
1 red chilli sliced
3 garlic cloves, minced
1 onion sliced
Mee Siam Paste (to be blended) :
5 cloves shallots
5 cloves garlic
6 dried red chilies
6 red chilies
100g dried shrimps briefly soaked in lukewarm water
2 tablespoons soy bean paste
Soak the bee hoon in water for 5 minutes. Drain and set aside.
Heat up cooking oil in a wok using medium heat.
Add onion and garlic and stir fry till fragrant. Add in the bean sprouts, koo chye, prawns and small cubes of tau kwa. Stir fry them for a while.
Dish out and set aside.
Heat oil in the same wok and stir in the mee siam paste with 1/2 cup of water. Mix well and bring to a boil.
Mix in soaked bee hoon. Use chopsticks to stir fry till gravy is completely absorbed.
Now add in the ingredients that was set aside and toss them well until there is no visible moisture left.
Dish out and serve with a squeeze of lime juice. Garnish with sliced egg strips and thinly sliced chilli.
